  • Rinse the exterior of the spaghetti squash.
    1 medium spaghetti squash
  • Lay the squash on its side and cut it into rings about 1-1.5 inches thick.
  • Arrange the rings on a baking sheet.
  • Sprinkle kosher salt on each ring and let them sit for about 20 minutes.

  • Preheat the oven to 425 F.
  • Dab the moisture from each ring with the cloth or paper towel.
  • Roast the rings for 25-30 minutes.
  • Use a fork to remove the squash noodles from the skin.
  • Serve with the sauce of your choice.
