Chicken Teriyaki: Debrief

I made changes.

I wrote the recipe, and I still changed it. Ain’t that dedication?

Overall, I enjoyed this recipe. The sauce could hold much more than the amount the recipe called for. I think I used about half a pound of broccoli. I would have added more carrots if I had prepped them. Speaking of the carrot prep, I used my food processor, and it just don’t make the carrot big enough. I’m gonna have to experiment with one more blade to see my results.

But. That’s not why we’re here. We gotta talk about that chicken teriyaki.

Initial Thoughts

Straight from the crockpot, I was enamored with this meal. It worked well over caulirice. It was simple to make. I think I was only working for about 30 minutes before the crock was on and cooking. That is extremely ideal.

I wasn’t happy with the consistency of the sauce. It was too watery even after sitting to cook. I thought the arrowroot starch would thicken the sauce up as it got hotter. But that was not the case. Another community member made the same dish and also thought the sauce was a disappointing texture. So I will have to play around with maybe other thickeners or thickener ratios.

Leftovers

The reheat on this was not great. I did not enjoy it the next day. Last week, Heal Me Delicious’ Chicken Pumpkin Soup was hittin’ each and every day on the reheat. So I was unhappy that I could not get that kind of longevity from this meal.

Also, I don’t think this would even freeze well. The broccoli would not hold up. Maybe if the chicken and sauce were only prepared and frozen so veg could be added later, this could be a freezer prep meal. But as it stands, I just know the broccoli would devolve into nothingness and the texture of this dish would be abysmal.

Onward. Maybe Upward?

I will make this again. I am not sure when. I am gonna, but some high-falutin’ somebody over on Masterclass said this:

For an arrowroot slurry, mix together aboutĀ four and a half teaspoons of arrowroot and three tablespoons of water for every cup of soup liquid. This method works well for slow cooker soups and stews. (Source)

So I will try to figure out to use that info to redevelop the recipe when I try it again…

Meanwhile, this Sunday, we’re gonna be making Cilantro AIP Chicken Vegetable Soup from Sonara In Bold. This recipe looks solid, so I’m gonna make just like she say. Will I see you there?
